The Amish believe in a literal interpretation of the bible, and this commandment is the reason why their dolls historically haven't featured faces (although that has pretty much changed nowadays) and why they do not like to have their picture taken (still very much a rule) or own cameras.
When our first artisan started making our dolls, her 3-year old son started naming them. He gave all the girl dolls with different color dresses different names. We loved this idea, and thought we'd keep his names intact. So Anna wears a red dress, Barbie wears the brown dress, Miriam the blue, Nancy the green, while Sarah sports a purple one.

Anna, Barbie, Nancy, Miriam and Sarah all have a white face, arms, and front torso, while the back of their head, torso back, and legs are black.
The girl dolls all come with a black bonnet tied to the neck with black ribbon, a blue, brown, green, purple or red long dress, and black apron.
They don't have any buttons or zippers, as the Amish don't view those notions as being "plain."
